I have an old macintosh powermate 7100 / 66.
I want to format Or "initialize" the hard drive,
reinstall the os (7.5) and get the cdrom & external modem working. I know how to do it with a pc but mac I don't know. Any help would be greatly appreciated!!

I would recommend that you download the manual at:

ftp://manuals.info.apple.com/Apple_Support_Area/Manuals/desktops/0305916APM7100UG.PDF

Then go to the troubleshooting section and read the initializing a hard disk section. You should also find the cdrom and modem info in that doc. Don't forget to backup any drivers etc. that you may need leter.
